I would prepare Carlos my slow cooked beef roast, mashed potatoes, corn on the cob, Cranberry optional and for dessert my chocolate brownies Very Happy

sorry I'm late... but if I ever find that groundhog... LOL! Kidding. I would make Urs Seafood Newburg with a simple green salad on the side, garlic bread and strawberry mousse for dessert.
